Soup Season is Here

After months of 100+ degree weather in the Sacramento Valley, we got our first measurable rain, and with it, much cooler temperatures! This morning, I woke up to temperatures near freezing! It’s time to start making soups!

One of my favorite soups to make is Cheddar Broccoli Soup in my Ninja Foodi. I usually get six servings out of a batch, which is a week’s worth of lunches for me! The preparation is quick and with the Foodi pressure cooking the veggies, it’s ready to eat in 20 minutes! My favorite thing about this recipe is that you can use all fresh ingredients! Another favorite soup of mine is Chicken Tortilla Soup. I cook this stovetop, so there’s no special equipment needed to make it. And since it uses canned goods I keep in my pantry, it’s a great meal to cook when other meal plans fall through.

Finally, there’s Beef Chili. I cook mine all day in a Crock Pot, so the aromas fill the house! There’s only 15 minutes of preparation to get this going, and there are leftovers for days! You can use hamburger or stew meat for the protein, or you can substitute ground turkey if you’re avoiding red meat.
